Ingredients

  • 600g skinless chicken breast, cut into even 2–3cm cubes
  • 1 red pepper, deseeded and cut into chunks
  • 1 yellow pepper, deseeded and cut into chunks
  • 1 medium courgette, cut into thick half-moons
  • 1 red onion, cut into wedges
  • 1 tbsp olive oil
  • 1 tbsp lemon juice, plus wedges to serve
  • 2 garlic cloves, finely grated
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ¼ tsp black pepper
  • ¼ tsp salt, or to taste
  • Fresh parsley and plain Greek yoghurt, optional, to serve

Equipment: air fryer, mixing bowl and 8–10 short skewers that fit your air-fryer basket. If using wooden skewers, soak them in water for at least 20 minutes and make sure they are suitable for your appliance.

How to Make Air Fryer Chicken and Vegetable Skewers

  1. Prepare the chicken and vegetables. Pat the chicken dry. Cut everything into similar-sized pieces so it cooks evenly.
  2. Mix the marinade. In a large bowl, combine the olive oil, lemon juice, garlic, paprika, oregano, cumin, pepper and salt.
  3. Coat everything. Add the chicken and vegetables and toss well. Leave for 15 minutes if you have time, or cook straight away.
  4. Thread the skewers. Alternate chicken and vegetables, leaving a little space between pieces. Avoid packing the ingredients too tightly.
  5. Preheat the air fryer to 190°C if recommended by your appliance manufacturer.
  6. Cook in batches. Arrange skewers in a single layer with room for hot air to circulate. Air fry for 14–18 minutes, turning halfway, until the chicken is fully cooked. Cooking time depends on cube size and your air fryer.
  7. Check and serve. The thickest piece of chicken must reach at least 75°C in the centre. Rest for 2 minutes, then serve with lemon wedges and a spoonful of Greek yoghurt if you like.
