Ingredients:
- 3 large potatoes
- 2 tbsp cornflour
- 100 grams of reduced-fat cheddar cheese, grated
- A handful of fresh parsley, chopped
- Salt and black pepper to taste
- Low-calorie cooking spray
- Optional Dipping Sauce:
- 4 tbsp fat-free Greek yogurt
- 1 tbsp tomato puree
- A dash of reduced-sodium soy sauce
- 1 tsp smoked paprika
