Beef and Sweet Potato Meatloaf

 Ingredients

  • 500g (17.5oz) of extra lean ground beef (5% fat or less)

  • 250g (9oz) of sweet potato, spiralized or grated

  • 1 clove of garlic, crushed

  • ¼ teaspoon of onion powder

  • 2 teaspoons of paprika

  • 2 teaspoons of Italian herbs

  • 1 teaspoon of salt

  • ¼ teaspoon of black pepper

  • 1 egg, beaten

  • cooking oil spray (low-calorie)

For the Glaze

  • 1 cup (240ml) of passata

  • ½ cup (120ml) of chicken or vegetable stock

  • 1 tablespoon of tomato paste

  • ½ teaspoon of onion powder

  • ½ teaspoon of garlic powder

  • 2 tablespoons  liquid sweetener (e.g., concentrated stevia, or granulated sweetener dissolved in a little hot stock)

  • Chopped fresh parsley

  • Salt and black pepper to taste
