Instructions:
- In a large non-stick saucepan, spray with low-calorie cooking spray and heat gently. Add the finely chopped onion and smoked paprika.
- Cook for 5 minutes, stirring occasionally, until the onion has softened slightly.
- Add the cauliflower and vegetable stock to the saucepan, bring to a boil, then cover and simmer for 15 minutes until the cauliflower is just tender.
- Use a slotted spoon to lift out a few cauliflower florets and set them aside for garnish.
- Stir the Laughing Cow Extra Light Cheese Triangles into the soup and blend the mixture with a stick blender or in a food processor until smooth. Season lightly.
- To serve, distribute the soup between shallow bowls and top each serving with the reserved cauliflower florets. Sprinkle with smoked paprika and serve immediately.
