Cauliflower Cheese Soup Recipe

Instructions:

  1. In a large non-stick saucepan, spray with low-calorie cooking spray and heat gently. Add the finely chopped onion and smoked paprika.
  2. Cook for 5 minutes, stirring occasionally, until the onion has softened slightly.
  3. Add the cauliflower and vegetable stock to the saucepan, bring to a boil, then cover and simmer for 15 minutes until the cauliflower is just tender.
  4. Use a slotted spoon to lift out a few cauliflower florets and set them aside for garnish.
  5. Stir the Laughing Cow Extra Light Cheese Triangles into the soup and blend the mixture with a stick blender or in a food processor until smooth. Season lightly.
  6. To serve, distribute the soup between shallow bowls and top each serving with the reserved cauliflower florets. Sprinkle with smoked paprika and serve immediately.
