Cowboy hotpot recipe

Instructions:

  1. Heat your oven to 200°C/fan 180°C/gas 6.
  2. Cook the potatoes in a saucepan of boiling water over a high heat for 5 minutes, then drain and set aside to cool.
  3. At the same time, spray a large non-stick saucepan with low-calorie cooking spray and put it over a medium heat.
  4. Brown the sausages on all sides for 5 minutes, then add the garlic, onion and peppers and cook for 5 minutes, stirring occasionally.
  5. Stir in the tomato purée and smoked paprika and cook for 5 minutes.
    Stir the stock cube into 200ml hot water, then add to the sausage pan along with the mixed beans, baked beans, sweetcorn, Marmite, Worcestershire sauce, vinegar and spring onions.
  6. Simmer for 5 minutes, then transfer to an ovenproof dish and top with the potatoes.
  7. Spritz with cooking spray and bake for 30 minutes.
  8. Serve with your favourite Speed vegetables.
