Mango Passion Fruit Trifle Ingredients:
- 175g pot Hartley’s 10 Cal Mango & Passion Fruit Jelly
- ½ large fresh mango, diced (see tip for ripeness!)
- 1 large ripe kiwi fruit, peeled, halved, and sliced
- 20g trifle sponge, diced
- 2 Mango & Passionfruit Hi-fi bars, finely chopped
- 1 ripe passion fruit (choose wrinkly ones for the best flavor!)
- 200g fat-free natural skyr or yogurt
- 75g fresh raspberries
- 25g reduced-fat squirty cream
How to Make Mango Passion Fruit Trifle:
- Prepare the Jelly Base: Gently stir the Hartley’s 10 Cal Mango & Passion Fruit Jelly with a fork. Divide the jelly evenly between two individual dessert glasses.
- Layer the Fruit & Sponge: Peel your mango, carefully cut out the stone, and dice the flesh into small chunks. Add these mango chunks to the glasses. Reserve two slices of the kiwi for garnish, then divide the remaining kiwi slices between the glasses. Next, distribute the diced trifle sponge and half of the chopped Hi-fi bars into each glass. Drizzle each serving with the juicy seeds from half a passion fruit.
- Add the Creamy Layer: In a small bowl, combine the skyr (or yogurt) with all but two of the fresh raspberries. Gently mix, then divide this creamy mixture between the dessert glasses. Carefully push down the mixture, being mindful not to crush the raspberries.
- Garnish & Serve: Top each trifle with the remaining chopped Hi-fi bars, a dollop of reduced-fat squirty cream, the reserved raspberries, and the kiwi slices. Serve immediately for the best fresh taste, or chill in the refrigerator until ready to enjoy.
Recipe Tips:
- Mango Tip: A ripe mango will yield slightly to gentle pressure and have a sweet aroma near the stem.
- Passion Fruit Tip: Wrinkly passion fruits are generally sweeter and juicier than smooth ones.
Enjoy this delightful and guilt-free Mango Passion Fruit Trifle! It’s a fantastic way to satisfy your sweet tooth while keeping things light.
