Easy & Healthy Individual Baked Banana Pancakes

Instructions:

  1. Prepare the batter: In a bowl, mash the 4 bananas with a fork until smooth. Stir in the 8 beaten eggs, then gradually add the 8 tablespoons of self-raising flour, mixing until just combined.
  2. Prepare the bowls: Preheat your oven to 180°C (160°C fan/Gas Mark 4). Lightly spray the inside of each of the 4 oven-safe bowls with low-calorie cooking spray.
  3. Divide the batter: Pour an equal amount of pancake batter into each of the prepared bowls.
  4. Bake the pancakes: Place the bowls on a baking sheet and bake for 20-25 minutes, or until the pancakes are golden brown and cooked through. A toothpick inserted into the center should come out clean.
  5. Serve: Let the bowls cool slightly before serving. Top each pancake with mixed berries and a dollop of fromage frais. Dust with ground cinnamon before serving.
