Instructions:
- Prepare Weetabix: Place Weetabix in a jug and pour over milk. Let it soften for 15 minutes until it forms a thick mush.
- Preheat oven: Preheat oven to 160°C (325°F). Line a 1kg loaf tin with parchment paper or grease well.
- Combine ingredients: In a mixing bowl, mash the bananas. Whisk in eggs, sweetener, and the softened Weetabix mixture until well combined.
- Dry ingredients: In a separate bowl, sift together flour, mixed spice, and baking powder.
- Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, stirring gently to avoid overmixing. Fold in the dried fruit.
- Bake: Pour the batter into the prepared loaf tin. Bake for 45 minutes, then loosely cover with foil to prevent overbrowning. Continue baking for another 30-40 minutes, or until a skewer inserted into the center comes out clean.
- Cool and serve: Let the bread cool completely in the tin before slicing and serving.
Tips:
- Ripe bananas: Use very ripe bananas for maximum sweetness.
- Sweetener: Adjust the amount of sweetener to taste.
- Freezing: Freeze individual slices for easy grab-and-go snacks.
- Enjoy this healthy and flavorful banana bread!
