Ingredients:

  • 1 large onion, finely chopped
  • 2 bell peppers (any color), chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 x 15 oz (approx. 425g) can of beans (e.g., black or kidney beans), drained and rinsed
  • 1 x 10 oz (approx. 280g) can of fat-free pureed beans
  • 1 cup (approx. 100g) shredded light cheese (e.g., a low-fat mozzarella or a light cheddar-style cheese)
  • 1 cup plain fat-free yogurt or a similar cultured dairy product
  • 1/2 cup tomato salsa (check the label for a low-sugar option)
  • Optional toppings: fresh cilantro, chopped tomatoes, shredded lettuce, additional salsa
