Honey Chilli Chicken

Instructions

  1. Flatten the chicken: Place each chicken breast between cling film and bash it with a rolling pin or meat mallet until it’s about 2cm thick.
  2. Spice it up: In a bowl, combine the smoked paprika, onion granules, cayenne pepper (if you’re using it), and a pinch of salt and pepper. Add the chicken and toss to coat it evenly with the spices.
  3. Sear the chicken: Heat a non-stick griddle or frying pan over high heat and give it a good spray with low-calorie cooking spray. Once hot, add the chicken and cook for 5-6 minutes per side, until it’s cooked through and beautifully golden.
  4. Whip up the glaze: While the chicken cooks, gently warm the honey and chilli sauce (or sriracha) in a small saucepan over low heat, stirring until they’re well combined.
  5. Glaze and serve: Spoon a quarter of the honey mixture over each cooked chicken breast. Divide the chicken among four plates, alongside the cooked rice and your chosen vegetables. Serve immediately with lime wedges for a zesty finish. Enjoy!
