Instructions:
- Preheat the oven to 200°C (180°C Fan/Gas mark 6).
- Prepare the Base: Crack the eggs into a bowl and combine with half of the cottage cheese. Consider using a hand blender for efficient mixing or whisk vigorously until well combined.
- Create Smooth Paste: Incorporate the remaining cottage cheese, along with salt and pepper, continuing to blend until a smooth paste is achieved.
- Form Dough: Add the dehydrated potato flakes, baking powder, and grated cheese. Gently fold the ingredients together until a dry, dough-like mixture is formed.
- Shape Scones: Prepare a baking tray by spraying it with low-calorie cooking spray or lining it with greaseproof paper. Shape the mixture into 7 scone-like forms and arrange them on the tray. Spritz the tops lightly with low-calorie cooking spray.
- Bake: Bake in the oven for 20 – 25 minutes or until the scones turn golden brown.
- Cool and Serve: Allow the scones to cool on a wire rack or plate before serving. Pair them with your preferred filling.
In An Air Fryer:
- Preheat your air fryer to 375°F (190°C).
- Rest: Place the scones on a baking sheet lined with parchment paper and let them rest for 5 minutes.
- Prepare air fryer basket: Lightly spray the air fryer basket with cooking spray.
- Bake: Transfer the scones to the air fryer basket and brush the tops with the skimmed milk. Bake for 10-12 minutes, or until golden brown and firm to the touch.
- Cool and serve: Let the scones cool slightly before serving. Enjoy them plain, with jam and cream, or topped with your favorite toppings.
