Low-Syn Sweet & Sour Chicken Recipe

Ingredients:

  • 1/2 tablespoon Chinese five-spice powder
  • 1 (20-ounce) can pineapple chunks in juice, drained (reserve juice)
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon tomato puree
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce (or tamari)
  • Cooking spray
  • 1 onion, chopped
  • 1 tablespoon grated fresh ginger
  • 2 carrots, peeled and chopped
  • 2 bell peppers (red, orange, or yellow), chopped
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 star anise
  • 4 baby leeks, trimmed and sliced
  • 1 (8-ounce) can bamboo shoots, drained
