Instructions:
- Heat Up: Preheat a large non-stick pan with a single spray of low-calorie cooking spray.
- Sauté the Cabbage: Add the shredded cabbage and cook over medium heat for 5 minutes, stirring occasionally, until softened.
- Add the Aromatics: Add the onion and cook for 3 minutes, or until translucent. Stir in the garlic and cook for another minute.
- Mushrooms & Pepper: Add the mushrooms and bell pepper. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden and the pepper is softened.
- Tomatoes & Seasoning: Add the tomatoes, eggs and a sprinkle of your favorite herbs and spices (e.g., oregano, thyme, basil).
- Simmer for 5 minutes, or until the tomatoes soften and release their juices.
- Taste & Adjust: Season with a little salt and pepper to taste. Be mindful of adding too much salt as some vegetables can be naturally salty.
- Serve & Enjoy: Remove the pan from heat and serve hot.
