Refreshing Vegan Strawberry Ice Cream

Instructions:

  1. Prep your fruit: Peel and slice the bananas. Combine the sliced bananas and chopped strawberries in a freezer-safe container. Freeze overnight.
  2. Blend it up: Once the fruit is solid, transfer it to a food processor. Add the vegan yogurt, golden syrup, and vanilla extract. Blend until smooth and creamy.
  3. Freeze: Pour the ice cream mixture into a freezer-safe container and freeze for at least 2 hours.

Tips:

  1. For a richer flavor, use slightly overripe bananas.
  2. If you don’t have vegan ice cream wafers, you can use crumbled vegan biscuits as a base.
  3. To prevent ice crystals from forming, stir the ice cream every 30 minutes during the freezing process.
