1. Simmer the Strawberry Syrup
Place 150g of the prepared strawberries into a small saucepan. Add the caster sugar, both lemon halves, and 100ml of water. Bring the mixture to a boil over medium heat, then immediately reduce the heat to low. Let it simmer gently for about 15 minutes until the strawberries break down and the liquid begins to thicken into a light, syrupy consistency.
2. Strain and Chill
Pour the cooked strawberry mixture through a fine-mesh sieve into a jug, pressing down gently to extract all the flavorful liquid. You can discard the solids (the spent berries and lemon halves). Allow the extracted syrup to cool to room temperature, then place it in the refrigerator to chill thoroughly for at least an hour.
3. Assemble and Serve
When you are ready to serve, fill a large presentation jug with plenty of ice. Toss in the remaining 50g of halved fresh strawberries and the torn mint leaves. Pour the chilled homemade strawberry syrup and the diet lemonade over the ice, giving it a good stir to mix all the flavors together.
