Instructions:
- Preheat your oven’s broiler or grill.
- Spray a 7-inch frying pan with cooking spray.
- Add the diced shallot, chopped bacon, and sliced mushrooms to the pan, and fry until they are lightly golden.
- Add the chopped tomatoes, and cook for a couple of minutes to release any excess liquid.
- Add the chopped spinach to the pan, and stir until it is just wilted.
- Spread the mixture out evenly across the bottom of the pan.
- Season with salt and black pepper.
- Whisk the eggs in a bowl, and pour them into the pan. Swirl them around to cover the bottom of the pan, and cook for about a minute, just until the bottom is set.
- Sprinkle grated cheddar cheese over the top of the frittata.
- Place the pan under the broiler or grill, and cook for 4-5 minutes, until the frittata is set and golden on top.
