Stuffed Pepper Casserole recipe

Ingredients:

  • 1 lb (450g) extra-lean ground turkey or 5% fat lean ground beef (Free Food)
  • 2 bell peppers, any colour, chopped (Free Food)
  • 1 large onion, finely chopped (Free Food)
  • 3 cloves garlic, minced (Free Food)
  • 1 tbsp Worcestershire sauce (1 Syn per tbsp, so measure carefully or omit if preferred)
  • 1 (15 oz / 425g) can low-sodium beef broth (Free Food)
  • 1 (15 oz / 400g) can diced tomatoes, no sugar added (Free Food)
  • 1 cup uncooked brown rice (counted as a Healthy Extra B choice or Synned – see notes below)
    OR 1 large head of cauliflower, grated or processed into “rice” (Free Food)
  • 1 tbsp dried Italian seasoning (Free Food)
  • 1 tsp salt (Free Food)
  • ½ tsp black pepper (Free Food)
  • 1 ½ cups (approx. 150g) reduced-fat Cheddar cheese and/or Mozzarella cheese, shredded (2 x Healthy Extra A choices or Synned at 4 Sys per 25g/1oz)
