A super-simple, lighter alternative to traditional quiche — perfect for breakfast, lunch, or a quick snack.
This version uses creamy cottage cheese for extra protein, a crisp tortilla base, and fresh toppings for a burst of flavour. It’s quick to prep, great hot or cold, and easy to customise with your favourite veg or lean proteins.

Ingredients:

  • 1 tortilla wrap (wholemeal for HEB or gluten-free alternative)
  • 3 large eggs
  • 80g fat-free cottage cheese
  • Toppings of choice — e.g. plum tomatoes, red onion, baby spinach
  • 30g reduced-fat mozzarella (part of Healthy Extra A)
  • Salt & pepper, to taste
  • Low-calorie cooking spray
