INSTRUCTIONS:
- Cook the potatoes in boiling water until tender. Drain well and mash
Stir in the tuna, capers, parsley, egg and spring onions. Add the juice from half a lemon, season with salt and pepper and divide the mixture into four equal portions. Shape them into large cakes on a non stick baking tray and bake in the oven 200c / fan 180c/ gas 6 for 20 minutes or until nicely browned. - Make the salsa by mixing the spring onions with sweetcorn and tomato. Add the lemon juice and season to taste.
- Serve with salad or Speed vegetables.
