Veggie Casserole with Cauliflower and Broccoli

Instructions:

Prepare Vegetables:

  • Cut the broccoli into florets.
  • Chop the onion, carrot, garlic, red pepper, and green peppers.
  • Wash the cherry tomatoes.

Cook Vegetables:

  • Bring a large pot of salted water to a boil.
  • Add the broccoli and cook for a few more minutes until bright green.
  • Drain and set aside.

Sauté Vegetables:

  • Heat olive oil in a large skillet over medium heat.
  • Add the onion and carrot and cook until softened.
  • Add the garlic, red pepper, and green pepper and cook for a few more minutes.

  • Beat the eggs in a separate bowl and pour over the vegetable mixture.
    Stir to combine.

Bake:

  • Transfer the mixture to a casserole dish.
  • Bake in the preheated oven for 30-40 minutes, or until the casserole is set and golden brown.

Serve:

  • Let the casserole cool slightly before serving.
