Instructions:
Prepare Vegetables:
- Cut the broccoli into florets.
- Chop the onion, carrot, garlic, red pepper, and green peppers.
- Wash the cherry tomatoes.
Cook Vegetables:
- Bring a large pot of salted water to a boil.
- Add the broccoli and cook for a few more minutes until bright green.

- Beat the eggs in a separate bowl and pour over the vegetable mixture.
Stir to combine.
Bake:
- Transfer the mixture to a casserole dish.
- Bake in the preheated oven for 30-40 minutes, or until the casserole is set and golden brown.
Serve:
- Let the casserole cool slightly before serving.
