- Dry the Potatoes: Drain the potatoes well and squeeze out any remaining water using a clean kitchen towel. This is a crucial step for achieving a crispy finish.
- Mix the Ingredients: In a large bowl, combine the dried potatoes, cornflour, grated cheese, chopped parsley, salt, and black pepper. Mix everything thoroughly until it forms a cohesive mixture.
- Form the Squares: Take small portions of the potato mixture and flatten them into squares or patties, about 1/2 inch thick.
- Air-Fry: Preheat your air fryer to 180°C (350°F). Lightly spray the air fryer basket with low-calorie cooking spray. Arrange the potato squares in a single layer, ensuring they don’t overlap. You may need to cook in batches.
- Cook: Air-fry for 15-20 minutes, flipping them halfway through, until they are golden brown and crispy on the outside.
- Make the Sauce: While the squares are cooking, mix the yogurt, tomato puree, soy sauce, and paprika in a small bowl until smooth.
