Bailey’s Cheesecake Recipe

Ingredients:

  • For the Base:
  • 1 egg white, whisked
  • 150-200g of your chosen crushed biscuits (opt for lower-calorie varieties like ginger snaps or plain digestives)
  • Low-calorie cooking spray
    For the Filling:
  • 500g fat-free natural Greek yogurt or plain quark
  • 250g extra-light plain soft cheese (like Philadelphia Light)
  • 2-3 tbsp Baileys Irish Cream (adjust to your taste; remember to consider its calorie/alcohol content for your daily intake)
  • 2-3 level tbsp granulated sweetener (or to taste)
  • 2 sachets (approx. 12g each) powdered gelatine
  • 100ml hot water
    For Decoration (Optional):
  • A few chocolate curls or grated milk chocolate (these will add to the overall calorie/fat/sugar content)
  • A dusting of cocoa powder
    Equipment:
  • 20cm springform tin, greased and lined with baking parchment
  • Mixing bowls
