Instructions:
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- In an oven-safe dish, combine the chopped onion, minced garlic, dried thyme, and tomatoes. Season lightly with salt and pepper, then spritz with cooking spray. Gently toss to combine.
- Place the block of feta in the center of the dish, nestled among the tomatoes.
- Bake for about 30 minutes, or until the feta is lightly browned and the tomatoes begin to burst.
- While the feta and tomatoes are baking, cook the pasta according to package directions until al dente. Drain well.
- Once the feta mixture is ready, carefully mash the feta and tomatoes with a fork in the baking dish. Be mindful of hot tomatoes! Stir in the chopped basil.
- Add the cooked and drained pasta to the dish with the feta sauce. Toss everything together until the pasta is well coated.
- Divide the pasta among four shallow bowls and garnish with the reserved basil leaves before serving.
