Baked Feta & Tomato Pasta

Instructions:

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. In an oven-safe dish, combine the chopped onion, minced garlic, dried thyme, and tomatoes. Season lightly with salt and pepper, then spritz with cooking spray. Gently toss to combine.
  3. Place the block of feta in the center of the dish, nestled among the tomatoes.
  4. Bake for about 30 minutes, or until the feta is lightly browned and the tomatoes begin to burst.
  5. While the feta and tomatoes are baking, cook the pasta according to package directions until al dente. Drain well.
  6. Once the feta mixture is ready, carefully mash the feta and tomatoes with a fork in the baking dish. Be mindful of hot tomatoes! Stir in the chopped basil.
  7. Add the cooked and drained pasta to the dish with the feta sauce. Toss everything together until the pasta is well coated.
  8. Divide the pasta among four shallow bowls and garnish with the reserved basil leaves before serving.
