Beef and Sweet Potato Meatloaf

 Instructions

1. Prepare the Meatloaf

  1. Preheat oven to 180°C 350°F / Gas Mark 4

  2. In a large mixing bowl, combine the ground beef, grated sweet potato, crushed garlic, onion powder, Italian herbs, beaten egg, paprika, salt, and black pepper. Use your hands to thoroughly combine the mixture.

  3. Line a loaf pan with aluminium foil or parchment paper.

  4. Add the meat mixture to the pan and press down well to shape it into a firm loaf.

  5. Place in the oven and bake for 45 minutes.

2. Make Glaze

  1. While the meatloaf is cooking, prepare the glaze.

  2. Add the passata, stock, tomato paste, Italian herbs, garlic powder, onion powder, and the liquid sweetener to a saucepan.

  3. Bring to a boil, then reduce the heat and simmer until the sauce reduces down and thickens slightly. Set aside.

3. Glaze and Finish

  1. After the meatloaf has cooked for 45 minutes, raise the oven temperature to 180°C 350°F / Gas Mark 4

  2. Pour the sauce evenly over the top of the meatloaf.

  3. Bake for a final 15 minutes. The sauce will go a beautiful deep red colour and glaze the top of the meatloaf.

  4. Remove from the oven, sprinkle with chopped parsley, and allow it to rest for approximately 10 minutes before slicing.

  5. Serve with your choice of  sides!
