Instructions
- Prepare the Base:
- Crush the Weetabix biscuits into fine crumbs.
- Divide the crumbs equally between 6-8 silicone molds.
- Add a small splash of skimmed milk to each mold and press down lightly.
- Refrigerate while preparing the filling.
- Make the Cheesecake Filling:
- In a bowl, combine the high-protein yogurt, very light plain soft cheese, and sweetener.
- Mix well until smooth and creamy.
- Assemble and Chill:
- Spoon the cheesecake mixture evenly into the prepared molds.
- Freeze for 30 minutes, or until slightly firm.
- Top and Serve:
- Gently heat the Biscoff spread until melted and runny.
- Spoon a small amount of melted Biscoff spread over each cheesecake.
- Top with a small spray of light cream.
- Garnish with a whole Biscoff biscuit (optional).
- Serve immediately or refrigerate until ready to serve.
