Instructions:
- Heat a non-stick frying pan over medium heat and spray generously with cooking spray.
- Add the minced garlic and cook until fragrant, about 20 seconds. Be careful not to let it burn.
- Add the shredded cabbage to the pan and cook, stirring frequently, until it softens.
- This usually takes around 3-5 minutes. If you like your cabbage slightly caramelized, continue cooking for a couple more minutes, keeping a close eye on it to prevent sticking.
- You may need to add a splash of water to the pan if it starts to get too dry.
- Spread the cooked cabbage out in a thin, even layer across the bottom of the pan.
- Pour the lightly beaten eggs over the cabbage, tilting the pan gently to ensure they spread evenly.
- Let the eggs cook for about 15-20 seconds, or until they start to set around the edges. Then, gently fold the eggs over until they are cooked through to your liking.
- Season with salt and pepper to taste.
- Remove from the heat and serve immediately!
