Instructions:
- In a medium-sized saucepan, spray low-calorie cooking spray and heat it over medium-low heat. Add the roughly chopped onions, cover the pan, and cook for 10 minutes.
- Meanwhile, cook the pasta according to the instructions on the packaging. However, before the recommended cooking time is complete, drain the pasta and return it to the pan.
- Remove the cover from the onions and increase the heat to high. Add the lean beef mince and fry it for approximately 5 minutes or until it turns brown, ensuring to break up any lumps. Remove any excess liquid and lightly season the beef.
- Preheat the grill to a high temperature.
- Combine the cooked beef with the pasta. Spoon half of this mixture into a shallow baking dish, then cover it with half of the sliced tomatoes. Lightly season the ingredients and place the dish under the grill for 5-7 minutes.
- Sprinkle half of the coarsely grated reduced-fat Cheddar over the baked mixture, then layer the remaining pasta, beef, and tomatoes on top. Grill the dish for 5 minutes, and then sprinkle the remaining cheese over it. Continue grilling for an additional 2 minutes, or until the top turns golden.
- Divide the prepared pasta bake into 4 portions and serve them on separate plates. Enjoy!
