Chocolate vanilla Cheesecake Recipes
I wanted to come up with something super yummy to eat after my lunch at work. For a long time I have been trying to come up with different ways to use Quarl (fat free cream cheese). I have seen similar recipes around, but this one is possibly one of the simplest.
Tips:
Use any flavor of sugar-free jelly you like.
You can substitute the dark chocolate with cocoa powder if desired.
For a richer chocolate flavor, use slightly more chocolate or add a tablespoon of cocoa powder to the vanilla mixture.
Optional:
For added texture, you can stir through a handful of chopped banana pieces before pouring the filling into the base.

Ingredients:
- 8 bourbon cream biscuits, finely crushed
- 40g low-fat spread, melted
- 11.5g sachet sugar-free lemon and lime jelly crystals
- 12g sachet powdered gelatine
- 700g no-added-sugar, fat-free vanilla yogurt
- 2 tsp vanilla extract
- 150g plain quark
- 2 level tbsp sweetener granules
- 40g dark chocolate, broken into pieces
- 2 level tsp cocoa powder, to decorate
Instructions:
- Put the crushed biscuits in a bowl, pour over the melted spread and mix well. Spoon into an 18cm springform cake tin and press the mixture down with the back of a spoon. Cover with cling film and chill the base for 30 minutes.
- At the same time, put the jelly crystals in a measuring jug, add 250ml boiling water and the gelatine and stir until dissolved. Leave to cool completely.
- Put the cooled jelly in your food processor with the yogurt, vanilla, quark and sweetener. Whizz until smooth, then pour it over the biscuit base. Cover and chill overnight, or until set.
- When you’re ready to serve, melt the chocolate in a heatproof bowl over a pan of gently simmering water, ensuring the bowl doesn’t touch the water (alternatively, melt it in the microwave on a low heat). Stir until smooth.
- Loosen the edges of the cheesecake using a hot palette knife and carefully transfer to a serving plate. Drizzle with the melted dark chocolate, then dust with the cocoa powder. Cut into 8 equal wedges to serve.
