Instructions:
- Preheat Oven: Preheat your oven to 180°C (350°F / Gas Mark 4).
- Prepare Dish: Line a small baking dish (approximately 20cm x 20cm or an 8-inch square dish) with baking parchment. Alternatively, you can spray it liberally with a low-calorie cooking spray.
- Whisk Eggs: In a large mixing bowl, lightly whisk the 3 large eggs.
- Combine Ingredients: Stir in the fat-free natural Greek yogurt, the well-drained sweetcorn, the chopped spring onions, baking powder, salt, and black pepper. If you’re adding jalapeños or red pepper flakes, stir them in now.
- Pour into Dish: Pour the mixture evenly into your prepared baking dish.
- Add Cheese: Sprinkle the grated reduced-fat cheese evenly over the top of the mixture.
- Bake: Bake for 25-30 minutes, or until the bake is golden brown on top and set in the middle. A skewer or toothpick inserted into the center should come out clean.
- Cool & Serve: Let it cool slightly in the dish before slicing and serving.
