Courgette and Carrot Bake

Instructions:

  • Preheat oven: Preheat your oven to 180°C (160°C Fan/Gas Mark 4).
  • Prepare Vegetables: Grate the courgettes and carrots. If using, finely chop the onion. Mince the garlic.
  • Combine Ingredients: In a large bowl, combine the grated courgette, carrot, onion (if using), and minced garlic. Season generously with salt and pepper. Squeeze out any excess moisture from the grated courgette using your hands or a clean tea towel. This will prevent the bake from being too watery.
  • Add Eggs: Crack the eggs into the vegetable mixture and mix well to combine.
  • Add Cheese: Grate your chosen amount of cheese and stir it into the mixture.
  • Prepare Baking Dish: Lightly grease a round or oval baking dish (approx. 20cm diameter) with low-calorie cooking spray.
  • Bake: Pour the vegetable mixture into the prepared dish. Bake in the preheated oven for 30-40 minutes, or until golden brown and set. The center should be firm to the touch. Check after 20 minutes and cover loosely with foil if it’s browning too quickly.
  • Garnish and Serve: Once cooked, sprinkle with fresh parsley. Serve warm.
