Crustless Quiche Recipe

Instructions:

  1. Preheat the oven to 180C/350F/Gas4. Spray an 8-inch/20cm flan dish or sandwich tin with cooking spray.
  2. In a frying pan over medium heat, cook the bacon, garlic, and mushrooms for about 10 minutes, or until lightly golden.
  3. Layer the potatoes first as a base then add some cheese.
  4. Transfer the cooked bacon and mushrooms to the prepared dish or tin.
  5. In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the grated cheese.
  6. Pour the egg mixture over the bacon and mushrooms in the dish or tin.
  7. Arrange the halved cherry tomatoes on top.
  8. Bake for 35-40 minutes, or until the quiche is firm to the touch and golden brown. Serve hot or cold.
