Instructions:
- Preheat the oven to 180C/350F/Gas4. Spray an 8-inch/20cm flan dish or sandwich tin with cooking spray.
- In a frying pan over medium heat, cook the bacon, garlic, and mushrooms for about 10 minutes, or until lightly golden.
- Layer the potatoes first as a base then add some cheese.
- Transfer the cooked bacon and mushrooms to the prepared dish or tin.
- In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the grated cheese.
- Pour the egg mixture over the bacon and mushrooms in the dish or tin.
- Arrange the halved cherry tomatoes on top.
- Bake for 35-40 minutes, or until the quiche is firm to the touch and golden brown. Serve hot or cold.
