Delicious and Healthy Potato Fritters 

Instructions:

  1. Boil the Potatoes: Add the chopped potatoes to a pot and cover them with water. Bring the water to a boil. If using, add the broth cube for extra flavor. Reduce heat and simmer until the potatoes are fork-tender.
  2. Mash or Rice the Potatoes: Drain the water, reserving about 50ml for later. While the potatoes are hot, mash them with a potato masher or use a ricer for a smoother texture.
  3. Combine the Mixture: In a large bowl, combine the mashed potatoes, reserved cooking water, chopped parsley, spinach (if using), salt, pepper, and egg. Mix well until everything is evenly incorporated. If desired, fold in the shredded mozzarella cheese.
  4. Form and Cook the Fritters: Heat a large frying pan over medium heat and coat it with cooking spray. Use an ice cream scoop or a spoon to portion out the potato mixture and form them into round patties. Gently flatten them with the back of a spoon sprayed with cooking spray, aiming for a thickness of about 1-1.5 cm.
  5. Fry the Fritters: Cook the potato fritters for a few minutes per side, or until golden brown and crispy. During cooking, gently press down on the fritters occasionally to help them maintain their shape.
  6. Serve and Enjoy: Remove the cooked fritters from the pan and drain any excess oil on paper towels. Serve them hot or cold, garnished with additional chopped parsley for a fresh touch.
