Step 1: Dissolve the Base

In a measuring jug, combine the sugar-free jelly crystals and the powdered gelatine. Pour in 280ml of boiling water and stir continuously until all the powder has completely dissolved. Set the jug aside and allow the liquid to cool down to room temperature.

Step 2: Pour the Clear Layer

Once cooled, pour exactly half of the jelly mixture evenly across your 24 moulds. Place the tray into the fridge to chill for about 15 minutes, or until the layer has just set. Keep the remaining liquid in the jug at room temperature.

Step 3: Create the Creamy Layer

Whisk the fat-free natural yogurt and vanilla extract into the remaining half of the jelly mixture until completely smooth. Carefully pour this creamy mixture on top of the first jelly layer in the moulds.

Step 4: Chill and Set

Return the tray to the fridge and leave to chill until completely firm and fully set. This should take approximately 2 hours. Once set, gently pop the sweets out of their moulds and enjoy!
