Flourless Chocolate Cake

Instructions:

  1. Preheat your oven to 180°C (350°F). Line a round or square baking dish with baking parchment.
  2. In a large mixing bowl, whisk together the eggs, apple compote, natural yogurt, and baking powder until well combined.
  3. Gently melt the dark chocolate. You can do this in a microwave in 30-second intervals, stirring in between, or over a saucepan of simmering water (bain-marie).
  4. Add the melted chocolate to the wet ingredients, mixing thoroughly.
  5. Stir in the rolled oats and a pinch of salt until everything is evenly incorporated.
  6. Pour the batter into your prepared baking dish.
  7. Bake for 40 minutes, or until a skewer inserted into the center comes out clean.
  8. Let the cake cool in the dish before slicing and serving.
