Ingredients

  • 2 large sweet potatoes (about 500g/1.1 lb), peeled and diced

  • 100g (about 1 cup) rolled oats

  • 3 tablespoons sugar substitute, granulated (or equivalent to your preferred sweetness)

  • 1 medium egg

  • 12 dried Medjool dates, roughly chopped (pitted)

  • 2 tablespoons low-fat buttery spread or margarine

  • 6 tablespoons unsweetened cocoa powder (or raw cacao powder)

  • 16 fresh raspberries

  • 1 teaspoon powdered sugar, for dusting (optional)

  • Pinch of salt
