Instructions:
- Preheat your oven to 350°F (180°C).
- In a large pan, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
- Add the chopped onion and bell peppers to the pan and cook for 5-7 minutes until softened. Stir in the garlic, chili powder, cumin, paprika, and oregano and cook for one minute more until fragrant.
- Stir in the drained beans, pureed beans, and salsa.
- Pour the mixture into a 9×13-inch baking dish.
- In a separate bowl, mix the yogurt with a pinch of salt and pepper. Dollop this mixture over the top of the beef and bean layer.
- Sprinkle the shredded light cheese evenly over the casserole.
- Bake for 20-25 minutes, or until the cheese is melted and bubbling.
- Serve hot with your preferred toppings.
