Healthy Burrito-Style Casserole 

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. In a large pan, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
  3. Add the chopped onion and bell peppers to the pan and cook for 5-7 minutes until softened. Stir in the garlic, chili powder, cumin, paprika, and oregano and cook for one minute more until fragrant.
  4. Stir in the drained beans, pureed beans, and salsa.
  5. Pour the mixture into a 9×13-inch baking dish.
  6. In a separate bowl, mix the yogurt with a pinch of salt and pepper. Dollop this mixture over the top of the beef and bean layer.
  7. Sprinkle the shredded light cheese evenly over the casserole.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbling.
  9. Serve hot with your preferred toppings.
