Healthy Harissa Orange Glazed Chicken

Instructions:

  1. Prepare the Glaze: In a large bowl, mix the Harissa paste, orange juice and zest, minced garlic, ginger, smoked paprika, salt, pepper, and cumin.
  2. Marinate the Ingredients: Add the chicken pieces and the prepared vegetables (onion, pepper, and courgette/zucchini) to the bowl with the glaze. Toss well to ensure all ingredients are coated evenly. For the best flavour, cover and refrigerate for at least 30 minutes, or overnight.
  3. Bake and Roast:
  4. Preheat your oven to 200°C (Gas Mark 6 / 400°F).
  5. Spray a large baking tray with cooking spray to prevent sticking.
  6. Spread the marinated chicken and vegetables onto the tray in a single layer for even cooking.
  7. Cooking Time: Roast the meal for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized. You may flip the ingredients once halfway through the cooking time.
  8. Serving: Serve the Harissa Orange Chicken immediately.
