Healthy & Lean Breakfast Muffins

Ingredients

  1. 1 pound (approx. 450g) lean ground turkey or chicken (5% fat or less)
  2. 4 large eggs, lightly whisked
  3. 1/2 cup (approx. 60g) reduced-fat shredded cheese (or a small amount of strong-flavored cheese like Parmesan for less fat)
  4. 1/2 cup (approx. 60g) all-purpose flour &  1 teaspoon baking powder
  5. Optional additions:
  6. 1/4 cup finely diced onion or bell pepper
  7. 2 tablespoons chopped fresh chives or parsley
  8. 1/2 teaspoon garlic powder or smoked paprika for extra flavor
