Healthy & Vibrant Bean Cassoulet 

 Ingredients

 

  • Low-calorie cooking spray (as needed)

  • 12 baby onions or shallots

  • 2 garlic cloves, finely chopped

  • 1 celery stalk, finely chopped

  • 2 large carrots, cut into bite-size chunks

  • 2 tsp dried mixed herbs

  • 1 x 200g can chopped tomatoes

  • 280ml hot vegetable stock (ensure it is suitable for vegans)

  • 200g green beans, cut into short lengths

  • 2 x 400g cans mixed beans, drained and rinsed

  • A handful of fresh parsley, finely chopped (for garnish)
