Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a 6-hole muffin tin or line with baking paper circles.
- Cook spaghetti according to package directions, then drain well.
- In a large bowl, combine cottage cheese, eggs, Parmesan cheese, garlic powder, asparagus, peas, and cooked spaghetti.
- Season with black pepper.
- Divide the mixture evenly between the muffin cups. Spray the tops with cooking spray.
- Bake for 25-30 minutes, or until golden brown and set.
- Let cool slightly before serving. Garnish with chopped chives.
Tips:
- You can substitute other vegetables for the asparagus and peas, such as broccoli, zucchini, or bell peppers.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
