  2. Chill and Firm: Cover the bowl and place the mixture in the refrigerator. Chill for at least 2 hours, or preferably overnight. The mixture must be firm enough to be handled and rolled.

  3. Roll the Truffles: Use a teaspoon or small scoop to portion the mixture. Quickly roll the portions between your palms to form small, smooth balls.

  4. Coat: Roll each truffle in your chosen low-sugar coating (e.g., extra cocoa powder or powdered oats).
