Ingredients

For the Savory Meat Layer

  • 500g (about 1.1 lbs) of Extra-Lean Ground Meat (Pork, Chicken, or Turkey mince are excellent high-protein choices)
  • 1 medium Onion, finely chopped (divided)
  • ½ tsp Dried Sage
  • 1 ½ tsp Smoked Paprika
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • Salt and Black Pepper, to taste
  • 300g (about 1 ¼ cups) Sweet Potato, grated (Substitute: grated butternut squash)

For the Veggie & Tomato Layer

  • 1 medium Red Bell Pepper, diced
  • 4 cups Fresh Kale (or Spinach), chopped with stalks removed
  • 120ml (½ cup) Tomato Passata (or tomato purée)
  • 120ml (½ cup) Chicken Stock (low-sodium is best)
  • 1 splash Balsamic Vinegar
  • Cooking Oil Spray (such as Avocado Oil or Olive Oil)

The Egg Custard

  • 8 large Eggs
  • Salt and Black Pepper, to season
