Ingredients
For the Savory Meat Layer
- 500g (about 1.1 lbs) of Extra-Lean Ground Meat (Pork, Chicken, or Turkey mince are excellent high-protein choices)
- 1 medium Onion, finely chopped (divided)
- ½ tsp Dried Sage
- 1 ½ tsp Smoked Paprika
- ½ tsp Garlic Powder
- ½ tsp Onion Powder
- Salt and Black Pepper, to taste
- 300g (about 1 ¼ cups) Sweet Potato, grated (Substitute: grated butternut squash)
For the Veggie & Tomato Layer
- 1 medium Red Bell Pepper, diced
- 4 cups Fresh Kale (or Spinach), chopped with stalks removed
- 120ml (½ cup) Tomato Passata (or tomato purée)
- 120ml (½ cup) Chicken Stock (low-sodium is best)
- 1 splash Balsamic Vinegar
- Cooking Oil Spray (such as Avocado Oil or Olive Oil)
The Egg Custard
- 8 large Eggs
- Salt and Black Pepper, to season
