Instructions
- Preheat oven: Set your oven to 180°C (160°C fan).
- Prepare fruit: In a medium-sized pie dish, combine rhubarb, pear slices, orange juice, zest, sweetener, and cinnamon. Toss to coat.
- Bake fruit: Place the dish in the oven and bake for 10-12 minutes.
- Make crumble: In a bowl, combine low-fat spread, sweetener, and flour. Rub together with your fingertips until it resembles breadcrumbs.
- Finish baking: Remove the fruit from the oven and sprinkle the crumble topping over it. Bake for another 10-12 minutes, or until golden brown.
- Serve: Let cool slightly before serving.
- Optional: For added crunch, consider adding chopped almonds to the crumble topping. You can also experiment with different spices like ginger or a combination of cinnamon and ginger.
