  1. Prep the Sausage: For easier handling, partially freeze the sausages before removing the casings. In a bowl or food processor, combine the sausage meat, curry powder, dried parsley, and mixed herbs. Season with a pinch of salt and pepper (optional). Divide the mixture into four equal portions.

  3. Assemble the Eggs: With one hand, flatten a portion of the sausage mixture. Using your other hand, gently wrap the mixture around a hard-boiled egg, completely encasing it. Repeat this process for the remaining three eggs.
  4. Coating and Baking: Whisk the two remaining eggs in a bowl. Dip each sausage-coated egg in the beaten egg, ensuring it’s well coated. Then, roll each egg in the crumbled wholemeal bread to create a crispy crust. Place the breaded eggs on a baking sheet lined with parchment paper. Lightly mist the tops with low-calorie cooking spray.
