Instructions:
- Prep the Sausage: For easier handling, partially freeze the sausages before removing the casings. In a bowl or food processor, combine the sausage meat, curry powder, dried parsley, and mixed herbs. Season with a pinch of salt and pepper (optional). Divide the mixture into four equal portions.
- Preheat the Oven: Turn your oven to 200°C (fan 180°C/gas 6) to preheat.
- Assemble the Eggs: With one hand, flatten a portion of the sausage mixture. Using your other hand, gently wrap the mixture around a hard-boiled egg, completely encasing it. Repeat this process for the remaining three eggs.
- Coating and Baking: Whisk the two remaining eggs in a bowl. Dip each sausage-coated egg in the beaten egg, ensuring it’s well coated. Then, roll each egg in the crumbled wholemeal bread to create a crispy crust. Place the breaded eggs on a baking sheet lined with parchment paper. Lightly mist the tops with low-calorie cooking spray.
- Bake until Golden: Bake the eggs for 20 minutes, or until the sausage coating is cooked through and lightly golden brown.

Preheat the air fryer to 340 degrees Fahrenheit.
Spray with spray oil.Preheat the air fryer to 390°F. Cook for 17 minutes. Turn them over at the half way mark.
