Simple Beef Enchiladas

Method:

  1. Step 1: In a large pot or pan, spray with low-calorie cooking spray and cook the diced onion until it softens. Add the beef mince and cook until it’s browned. Stir in the chili seasoning blend.
  2. Step 2: Add the diced peppers and tomato puree, stirring until everything is combined. Pour in the chopped tomatoes, drained kidney beans, Worcestershire sauce, balsamic vinegar, and mushrooms. Reduce the heat to low and let it simmer for about an hour.
  3. Step 3: Once the chili is cooked, carefully spoon a portion onto each tortilla, roll it up, and place it seam-side down in an oven-safe dish.
  4. Step 4: In a small bowl, mix the passata with the fajita seasoning blend. Spread a light layer of this sauce over the tops of the wraps. Sprinkle with the mozzarella and shredded cheese. Bake at 200°C (400°F) for 15-20 minutes, or until the cheese is melted and bubbly.
  5. Step 5: Top with reduced-fat sour cream and serve.
