Zesty Salmon Pasta

Ingredients (Serves 4)

 

  • 500g dried fusilli pasta (or other shape of your choice).

  • 4 skinless and boneless salmon fillets, cut into bite-sized pieces.

  • 2 peppers (any colour), deseeded and chopped.

  • 1 clove garlic, crushed.

  • 300g green beans, trimmed and halved.

  • 100g fat-free natural fromage frais or quark.

  • 1 large unwaxed lemon, zested and cut into wedges/slices.

  • A bag of watercress or baby spinach, for serving.

  • Low calorie cooking spray.

  • Salt and freshly ground black pepper, for seasoning.
