4 skinless and boneless salmon fillets, cut into bite-sized pieces.

2 peppers (any colour), deseeded and chopped.

1 clove garlic, crushed.

300g green beans, trimmed and halved.

100g fat-free natural fromage frais or quark.

1 large unwaxed lemon, zested and cut into wedges/slices.

A bag of watercress or baby spinach, for serving.

Low calorie cooking spray.

Salt and freshly ground black pepper, for seasoning.
