Zesty Salmon Pasta

Instruction

  1. Cook the Pasta: Cook the pasta according to the package instructions. Before draining, reserve about 100ml of the cooking water and set it aside.

  2. Cook Salmon and Veggies: Spray a large non-stick frying pan with cooking spray and heat over a medium-high heat. Add the salmon pieces and stir-fry for a few minutes until golden brown and cooked through. Remove the salmon from the pan and keep it warm. Add the chopped green beans, chopped peppers, and crushed garlic to the same pan. Fry for 6-8 minutes until the vegetables start to lightly brown and soften.

  3. Combine the Dish: Place the drained pasta into a large mixing bowl. Add the cooked vegetables, the lemon zest, and the watercress (or spinach). Stir in the fromage frais and the reserved pasta water, then season well with salt and pepper. Mix until the ingredients are combined and a light sauce is formed. Gently fold in the cooked salmon pieces, being careful not to break up the fish too much.

  4. Serve: Serve the pasta immediately, garnished with the lemon wedges.
