Ingredients:

  • 2 boneless, skinless chicken breasts, all visible fat removed
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons balsamic vinegar
  • 1-2 sprays low-calorie cooking spray
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 oz dried whole wheat pasta (penne or linguine work well)
  • Fresh basil leaves, chopped (for garnish)
