Berry Cobbler Recipe

Method

  1. Preheat Oven: Preheat your oven to 200°C Gas Mark 6.

  2. Prepare Fruit: Place all the strawberries and any other berries into an ovenproof dish. Add 100g of the sweetener, the cornflour, and the lemon juice. Mix well until the fruit is coated.

  3. Prepare Topping: In a mixing bowl, combine the almond flour, oats, reduced-fat spread, 20g of sweetener, and a pinch of salt.

  4. Create Crumb: Using your fingers, rub the ingredients together until the mixture resembles coarse breadcrumbs.

  5. Add Egg: Add the beaten eggs to the topping mixture and mix well. The mixture should be moist and crumbly.

  6. Assemble: Using a tablespoon, drop large spoonfuls of the topping mixture evenly onto the fruit, making sure it covers the surface but leaves a few gaps.

  7. Bake: Place in the oven and bake uncovered for 20-25  minutes, until the topping is golden brown and the fruit juices are bubbling around the sides.

  8. Serve: Let it cool slightly and enjoy warm!
