Prepare the Steak: Lightly coat a large non-stick pan with cooking spray and set over high heat. Season the steak with the beef seasoning blend. Cook the steak for $2\frac{1}{2}$ to $3$ minutes per side for medium-rare, adjusting as needed. For very thin minute steak, simply stir-fry quickly until browned. Transfer the cooked steak to a plate, cover with foil, and let it rest.

Sauté Vegetables: Wipe the pan clean and add another light coating of cooking spray. Add the sliced onions, green pepper, and mushrooms. Sauté over medium-high heat until the vegetables are softened and the onions begin to caramelize. If they start to stick, add a tablespoon of water or broth and scrape up any browned bits. Season lightly with salt and pepper.

Combine Filling: Thinly slice the rested steak across the grain (if not already in thin strips). Return the sliced steak, sautéed onions, green peppers, and mushrooms to the pan. Mix everything well and heat through for 1-2 minutes.

Portion and Top with Cheese: Divide the steak and vegetable mixture evenly among four individual oven-safe bowls or foil containers (to match the image). Top each serving generously with the cheese slices or shredded cheese.

Melt the Cheese: Place the bowls under a hot broiler (grill) for 1 to 2 minutes until the cheese is thoroughly melted, bubbly, and slightly golden in spots. Watch carefully to prevent burning.
